Ingredients

  • 2 large slices bread (about 100 g total), sourdough, multigrain, or seeded, about ½ inch thick
  • 1 1/8 cups cottage cheese (250 g), about 1 cup plus 2 tbsp
  • 1 avocado (about 200 g), medium, ripe but firm
  • 1 tsp extra virgin olive oil (5 ml)
  • 2 tsp balsamic glaze (10 ml), or to taste
  • kosher salt to taste
  • black pepper freshly ground, to taste
Optional
  • 1 tsp sesame seeds or mixed seeds
  • 1 pinch chili flakes

Method

  1. Lightly drizzle the bread with extra virgin olive oil. Toast in a frying pan over medium heat until golden brown and crisp, 1–2 minutes per side.

  8. Sprinkle with sesame seeds or mixed seeds. Add chili flakes if desired.
  9. Serve immediately while the toast is still crisp.

Notes

  • Use a sturdy bread (sourdough, seeded, or multigrain) so the toast holds up under the creamy toppings.
  • Pick an avocado that is ripe but still firm enough to slice neatly.
  • For a smoother spread, blend the cottage cheese before using.
  • Best served immediately; assemble just before eating.
