Ingredients

  • 2 slices bread preferably sourdough or rustic country bread
  • 2 peaches ripe but firm, cut into wedges
  • 2.1 oz Brie cheese (60 g), about 1 oz (30 g) per toast
  • 2 slices Jamón (about 0.7 oz / 20 g total), thin, such as Jamón Serrano
  • 1 tbsp extra virgin olive oil (15 ml), for toasting the bread
  • 1 tsp honey (5 ml), ½ tsp per toast
  • 1 tsp balsamic glaze (5 ml), ½ tsp per toast

Method

  1. Slice the peaches into wedges. Heat a dry skillet over medium heat and cook the peaches on both sides until lightly browned and slightly softened. Set aside.

Notes

  • Choose ripe but firm peaches so they brown without falling apart.
  • No extra salt is needed; Brie and Jamón are already salty.
  • Assemble just before serving to keep the bread crisp.
